Пастеризация

Пастеризация — уничтожение микроорганизмов в жидких пищевых продуктах (молоке, вине, пиве и др.) посредством длительного (15-30 мин) однократного нагревания до температуры ниже 100°С. (обычно 60-70 °С).

Предложена французским учёным Л. Пастером (1822-1895). Пастеризация лучевая — обработка α-излучением. Сравни тиндализация, стерилизация.
